
This is my version of the famous Indian dish Aloo Palak. My family enjoyed it so much, I had to share it because even my picky 3 year old licked his plate lol. This dish definitely tastes better than it looks. I made it mild so that those who are sensitive to peppers may enjoy.
3 potatoes, peeled and cubed
10 oz bag of spinach
1 onion, chopped
4 cloves garlic, chopped
½ inch ginger, grated
2 tsp ground coriander
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground paprika
½ tsp cumin seeds
1 Tbsp + 1 tsp coconut oil (opt)
sea salt to taste


Boil potatoes in salted water until tender around 10-15 minutes, drain and set aside. In a skillet add 1 Tbs oil and sauté onions, garlic and ginger; add spinach and continue to cook for about 5 minutes. Remove from heat and let cool, then blend until creamy. In a skillet add the extra tsp oil, add the cumin seeds and cook for 1 minute. Add creamed spinach, then add potatoes, coriander, turmeric, cumin, paprika and salt to taste. Delicious served with roti.
